Protein S’mores Cookie Sandwich
Chef Miami | Protein S’mores Cookie Sandwich
- 1 1/4 cups eatmeguiltfree DIY Blondie mix
- 1/4 cup xylitol
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/8 tsp salt
- 1/2 cup peanut butter
- Almond milk (enough to mix)
- 1/2 tsp ground cinnamon
- 1/2 cup chocolate chips
- 2 tbs almond flour
- 1 1/2 cup chefmiami Protein Marshmallows
- 1/2 cup melted dark chocolate
- 1 tsp himalayan salt
Preheat oven to 370 F. Spray a cookie sheet with nonstick coconut oil.
In a mixing bowl whisk together eatmeguiltfree DIY Blondie mix, almond flour, baking soda, salt and cinnamon for 30 seconds, set aside.
In a bowl combine together peanut butter and xylitol. Add vanilla extract. Slowly pour in dry mixture and mix just until combined. Add dark chocolate chips and carefully combine.
Scoop dough out and shape into balls. Transfer balls to cookie sheet and flatten a little bit.
Bake for 9-10 minutes. Remove from oven and allow to cool.
Once cool, spread a spoonful of melted chocolate over the bottom side of one cookie and let cool slightly. Then pipe protein marshmallow over the bottom side another cookie.
