Chef Miami | Zucchini Vegan Lasagna

Ingredients

  • 1 bag MorningStar Farms Grillers® Crumbles™
  • 4 medium zucchini, sliced 1/8″ thick
  • 1 can organic Tomato Paste
  • 1 tsp coconut oil
  • 2 cloves garlic
  • 1/2 chopped onion
  • 2 cups Vegan cheese
  • 2 cups Alexia Foods Sweet Potato Waffles
  • 1 tsp chopped fresh basil
  • 2 tomatoes
  • 2 cups water

Method

Step 1

Preheat oven to 370 F.

Step 2

In a blender or food processor blend Tomato Paste, 2 tomatoes, 1/2 chopped onion and garlic until you get a sauce. Slowly add water (if needed)

Step 3

In a medium sauce pan brown your MorningStar Farms Grillers® Crumbles™. Add Tomato sauce and 1/2 cup water. Simmer on low for 20 min (stir occasionally)

Step 4

In a casserole layer zucchini on the bottom, place on layer sweet potato waffles, spread 1/2 cup sauce, them top with vegan cheese.

Step 5

Repeat the process until are your ingredients are used up. The last layer should be your meatless meat.

Step 6

cover with foil and bake for 40 min.

Step 7

Remove foil. Spread more cheese on top and bake for 20. You can broil it on low if you want.
