Chocolate- Pumpkin Bread
Chef Miami brought to you the healthy alternative to the classic moist pumpkin bread spiced with cinnamon, ginger, nutmeg and pumpkin spice.
What better option to the ” Pumpkin everything” season that a healthy, flourless and guilty free pumpkin bread made of with the healthiest and more delicious ingredients.
- 2 1/2 cups oat flour
- 1 scoop protein powder
- 1 tbs vanilla extract
- 2 egg whites
- 1 tbs baking powder
- 1 tsp ground cinnamon
- 1 tsp nutmeg
- 1 can pumpkin puree
- 1 tsp pumpkin spice (optional)
- 2/3 cup stevia
- 1 1/2 cup dark chocolate chips
- 1/3 cup almond milk
- 1/3 cup nuts n more peanut butter
Preheat oven to 380 F. Spray a loaf pan with non stick spray.
In a bowl mix dry ingredients: oat flour, baking powder and protein powder, ground cinnamon, nutmeg, pumpkin spice and stevia. Set aside.
In food processor or blender add pumpkin puree, peanut, butter, almond milk, egg whites and vanilla extract. Add oat mixture.
Once blended add dark chocolate chips and stir with a spatula.
Pour the batter into the loaf pan and bake for 30 minutes. Let it cool before serving.
Enjoy this healthy alternative of pumpkin bread as a snack in the middle of the day or as breakfast with your favorite beverage.
